Low Carb Turkey-Stuffed Peppers

Put a healthier family classic on the dinner table by substituting ground turkey for ground beef, and using frozen riced cauliflower instead of high-carb white rice.


Ingredients

nonfat cooking spray

1 tablespoon olive oil

1 pound ground turkey

½ cup diced onion

3 tablespoons diced fresh jalapeno pepper, or to taste

2 cloves garlic, chopped

2 cups frozen cauliflower rice (such as Green Giant®)

1 (14.5 ounce) can diced tomatoes, undrained

1 (8 ounce) can tomato sauce

½ cup water

2 teaspoons sambal oelek chili paste

½ teaspoon salt

½ teaspoon freshly ground black pepper

2 large bell peppers, any color - cut in half lengthwise, cored, and seeded

4 (1 inch) cubes Colby-Jack cheese

aluminum foil

⅓ cup shredded Colby-Jack cheese

4 teaspoons reduced-fat sour cream

8 slices pickled jalapeno peppers (Optional)

Directions

 

Step 1

Preheat the oven to 375 degrees F (190 degrees C). Spray a baking dish with cooking spray.

Step 2

Heat olive oil in a large skillet over medium heat. Stir in ground turkey, onion, jalapeno, and garlic. Cook and stir until turkey browns and vegetables are tender, 8 to 10 minutes. Drain grease from the skillet. Add frozen riced cauliflower, tomatoes, tomato sauce, water, chili paste, salt, and pepper; stir until well incorporated. Reduce heat and simmer for 5 minutes.

Step 3

Place bell pepper halves in the prepared baking dish. Place 1 Colby-Jack cheese cube in each pepper half, and fill with turkey mixture. Spoon remaining turkey mixture into the dish around the peppers.

Step 4

Cover dish with aluminum foil, and bake in the preheated oven for 30 minutes. Remove foil and sprinkle each pepper with shredded Colby-Jack cheese. Bake, uncovered, until peppers are soft and cheese has melted, about 10 minutes more.

Step 5

To serve, spoon a little turkey mixture onto a plate, and place a bell pepper half on top of it. Top each serving with 1 teaspoon sour cream and 2 jalapeno slices.

Ayam Belanda Lada Berisi Karbohidrat Rendah

Letakkan klasik keluarga yang lebih sihat di meja makan dengan menggantikan kalkun tanah dengan daging lembu, dan gunakan kembang kol beras beku dan bukannya nasi putih karbohidrat tinggi.


Bahan-bahan

1 semburan masakan tanpa lemak

1 sudu besar minyak zaitun

 1 paun ayam belanda tanah

 1/2 cawan dadu bawang

 3 sudu besar dadu lada jalapeno segar, atau secukup rasa

 2 ulas bawang putih cincang

 2 cawan nasi beku kubis bunga (seperti Green Giant®)

 1 (14.5 auns) tomato boleh didatar, tidak terterkuras

 1 tin (8 auns) sos tomato

 1/2 cawan air

 2 sudu teh pes cili sambal oelek

 1/2 sudu teh garam

 1/2 sudu teh segar lada hitam

  2 lada loceng besar, apa-apa warna - dipotong separuh memanjang, berketul, dan berbiji

 4 (1 inci) kiub keju Colby-Jack

 kertas logam aluminium

 1/3 cawan dicincang keju Colby-Jack

 4 sudu teh krim masam kurang lemak

 8 keping jeruk lada jalapeno (Pilihan)

 

Arahan

 

Langkah 1

Panaskan ketuhar hingga 375 darjah F (190 darjah C). Semburkan loyang dengan semburan memasak.

 

 Langkah 2

Panaskan minyak zaitun dalam api sederhana. Kacau ayam belanda tanah, bawang, jalapeno, dan bawang putih. Masak dan kacau sehingga ayam belanda perang dan sayur-sayuran lembut, 8 hingga 10 minit. Tiriskan minyak dari kuali. Masukkan beras beku kubis bunga, tomato, sos tomato, air, pes cili, garam, dan lada; kacau sehingga sebati. Kurangkan haba dan reneh selama 5 minit.

 

 Langkah 3

Letakkan bahagian lada belang dalam pinggan. Letakkan 1 kiub keju Colby-Jack pada setiap separuh lada, dan isi dengan campuran ayam belanda. Sudukan baki campuran ayam belanda ke dalam hidangan di sekeliling lada.

 

  Langkah 4

Tutup hidangan dengan kertas logam aluminium, dan bakar di dalam ketuhar yang dipanaskan selama 30 minit. Keluarkan kertas logam dan taburkan setiap lada dengan keju Colby-Jack yang dicincang. Bakar tanpa ditutup, sehingga lada lembut dan keju telah cair, kira-kira 10 minit lagi.

 

  Langkah 5

Untuk dihidang, sudu sedikit campuran ayam belanda ke pinggan, dan letakkan separuh lada kuning di atasnya. Di atas setiap hidangan diletak 1 sudu teh krim masam dan 2 keping jalapeno.
